Amaranth and Kale Salad with Lemon and Garlic Dressing
This fresh, crunchy salad is loaded with nutrients and topped with a zesty lemon-garlic dressing.
Ingredients
1 bunch kale, chopped
1 cup cooked amaranth
1 bell pepper, diced
1 cucumber, diced
2 tbsp olive oil
1 clove garlic, minced
Juice of 1 lemon
Salt and pepper to taste
Method
In a large bowl, combine kale, amaranth, bell pepper, and cucumber.
In a small bowl, whisk olive oil, garlic, lemon juice, salt, and pepper.
Pour dressing over salad and toss well.
Let sit for 5 minutes before serving.
