Kale and White Bean Soup with Leeks and Carrots

This hearty soup is packed with nutrients and comforting flavors. The kale and white beans make it filling, while the leeks and carrots add sweetness and depth.

Ingredients

1 bunch kale, chopped
1 cup white beans, cooked
1 leek, sliced
2 carrots, diced
3 cloves garlic, minced
4 cups vegetable broth
Salt and pepper to taste

Method

In a large pot, sauté leeks and garlic in olive oil over medium heat for 5 minutes.
Add carrots and cook for another 5 minutes.
Pour in the vegetable broth and bring to a boil.
Add beans and kale. Simmer for 15 minutes until the kale is tender.
Season with salt and pepper to taste. Serve hot.
