KALE SALAD WITH PLUMS
This salad is all about texture and bold flavors. The kale gets tender from a quick lemon massage, the plums and dates add a sweet bite, and the roasted sunflower seeds bring a salty crunch that ties everything together. Ingredients
WHAT YOU’LL NEED
- 1 large bunch of kale (about 1 lb), stems removed and leaves finely sliced
- 1 lemon
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
- 4 ripe plums, pitted and thinly sliced
- 6 Medjool dates, pitted and thinly sliced
- ½ cup roasted, salted sunflower seeds
Method
1. Prep the Kale
Add your sliced kale to a big bowl. Squeeze in the juice of one lemon, drizzle the olive oil over it, and season with a pinch of salt and black pepper.
2. Massage the Kale
Use your hands to gently massage the kale for 2 to 3 minutes. You’ll feel it start to soften and darken. That’s how you know it’s ready.
3. Add the Fruit
Toss in your sliced plums and dates. Gently mix everything together until the fruit is evenly spread through the salad.
4. Top It Off
Right before serving, sprinkle the roasted sunflower seeds over the top for that final crunchy touch.
TIPS FOR SERVING
This salad is amazing with fufu or on its own. You can also pair it with roasted veggies or grilled protein if you're turning it into a full meal.
HOW TO STORE IT
If you’re making it ahead or storing leftovers, keep the sunflower seeds separate until serving so they stay nice and crunchy. Everything else can go in an airtight container in the fridge for up to 2 days.
