Roasted Eggplant and Cherry Tomato Pasta

Roasted eggplant and cherry tomatoes make this pasta dish rich and satisfying. It’s simple but bursting with flavor!

Ingredients

1 eggplant, cubed
1 cup cherry tomatoes, halved
3 cloves garlic, minced
2 tbsp olive oil
8 oz pasta of choice
Salt and pepper to taste
Fresh basil for garnish

Method

Preheat the oven to 400°F (200°C).
Toss eggplant and cherry tomatoes with olive oil, garlic, salt, and pepper.
Roast for 25 minutes until soft and slightly caramelized.
Meanwhile, cook pasta according to package instructions.
Toss roasted vegetables with pasta. Top with fresh basil and serve.
