Sweet Corn and Zucchini Fritters

These crispy fritters are sweet, savory, and super satisfying. Great as a snack, appetizer, or light breakfast meal!

Ingredients

1 cup corn kernels
1 zucchini, grated
2 eggs
½ cup flour
¼ tsp baking powder
Salt and pepper to taste
Olive oil for frying

Method

In a bowl, combine corn, zucchini, eggs, flour, baking powder, salt, and pepper.
Heat olive oil in a pan over medium heat.
Drop spoonfuls of batter into the pan, flattening slightly.
Cook for 2–3 minutes on each side until golden.
Drain on paper towels and serve warm.

Crispy on the outside, soft on the inside — these fritters are a crowd-pleaser! Serve with sour cream or a fresh salsa.
