Roasted Brussels Sprouts & Carrots with Garlic and Parsley

Warm, crispy, and full of flavor — this easy roasted Brussels sprouts and carrots recipe is perfect as a side dish or a light meal. The garlic and parsley give it a fresh, savory touch that everyone will love.

Ingredients

1 lb Brussels sprouts, trimmed and halved
3 carrots, peeled and sliced into sticks
3 cloves garlic, minced
2 tbsp olive oil
Salt and pepper to taste
2 tbsp fresh parsley, chopped

Method

Preheat the oven to 400°F (200°C).
In a large bowl, toss Brussels sprouts and carrots with olive oil, garlic, salt, and pepper.
Spread the vegetables evenly on a baking sheet.
Roast for 25 minutes, stirring halfway through, until golden and crispy.
Remove from the oven and sprinkle with chopped parsley. Serve warm.
